I finally got iSCSI working - I had to disable all CHAP authentication, as it was confusing me. Once I found advice on the net to set the initiator networks to 255.255.255.255 in the target setup, it connected right off. :)
Then, once the iSCSI Initiator on XP saw the device, I went to Computer Management - Disk Management - and saw the drive there, formatted it, and now I have a 519gb Z: that I just completed a complete ghost image to.
Of course, recovering from it would require XP with the iSCSI initiator, so it's not a bare-metal recovery. I need to work on that.
